~ Sweet Treats ~
June 10th, 2011 by Holly McMillen
Hi Friends~
I got a wild hair this morning and decided that the five brown bananas on my counter were NOT going to be wasted. At 8am this morning I was baking banana bread! Now, I don’t make your run of the mill banana bread. I was raised on chocolate chip banana bread :). Yummo!!!
Since my batch yielded 2 large (8×4″) loaves and one small (5×3″) loaf, I decided to share the love with our next door neighbors. They have their 4 yr old granddaughter staying with them for a month and she is just the cutest little thing. She has been outside helping her grandpa with yard work for the last couple of days. I can tell she has him wrapped around her little finger.
Of course, I couldn’t just take a PLAIN loaf of bread to them, so I had to spiff it up a bit.

Recipe:
Preheat oven to 325 degrees
Grease and flour bottom of loaf pans only

Ingredients:
3 cu flour
1 and 1/2 tsp baking soda
1/4 tsp salt
3/4 cu softened butter
3 eggs (beaten)
3/4 cu brown sugar
1/2 cu sugar
3 cu mashed bananas
12 oz bag of chocolate chips
~*~*~*~*~
Directions:
Mix dry ingredients (flour, baking soda and salt) in a large mixing bowl
Mix wet ingredients (butter, sugar, eggs and bananas) in a medium mixing bowl
Add wet ingredients to dry ingredients and mix thoroughly.
Fold in chocolate chips
Fill loaf pans 3/4 full and put in preheated oven.
Since all ovens cook differently, I suggest you check your loaves after 30 minutes. When you can poke a toothpick in the center and it comes out clean, they are done.
Let loaves cool on a baking rack in the pans for 10 – 15 minutes before removing from the pans. Let cool before wrapping. I wrap mine in plastic wrap and then cover them in aluminum foil to keep them moist.
Enjoy!

Now I think I’ll go have a piece :).
Thanks for stopping by!!

Mmmmm, Mmmmm good 🙂 I make my kids and the after school kids banana bread quite often. Sometimes for a treat I add choc chips. Looooove how the house smells when it’s backing. I’m sure the 4 year old will happily make you Auntie Holly 😉 Love how you gift wrapped it – a fabulous touch to the already wonderful gesture. Have a wonderful weekend (((hugs))).
Now this looks yummy!! The wrapping on it is wonderful too.
Hope you are having a great day.
